Oat Pulp Chocolate Brownies

Healthy, vegan, chocolate brownies that can be made from the oat pulp leftover from making oat milk.

Ingredients
  

  • cup oat pulp  leftover from making oat milk
  • 2 medium bananas mashed
  • 1 Tbsp chia seeds 
  • ½ cup vegan protein powder
  • ¼ cup cocoa powder 
  • ¼ cup non-dairy milk
  • ½ cup chopped almonds or chocolate chips
  • 1 tsp baking powder 
  • Coconut oil for greasing

Instructions
 

  • Preheat oven to 180°C (360°F).
  • Grease a shallow baking dish with coconut oil.
  • Mix chia seeds and water then stand for 10 mins to make a chia egg.
  • Combine mashed banana, oat pulp, non-dairy milk and chia egg in a bowl using a wooden spoon.
  • Sift in cocoa powder, protein powder and baking powder one at a time, stirring each into the mixture until combined.
  • Fold in chopped nuts or chocolate chips.
  • Transfer to the oiled baking dish and bake for 20 mins.

Notes

Best enjoyed warm. Keep refrigerated for up to 5 days.
