Oat Pulp Chocolate Brownies
Healthy, vegan, chocolate brownies that can be made from the oat pulp leftover from making oat milk.

oat pulp
leftover from making oat milk

medium bananas
mashed

Tbsp
chia seeds

vegan protein powder
¼
cup
cocoa powder
¼
cup
non-dairy milk
½
cup
chopped almonds or chocolate chips

tsp
baking powder
Coconut oil
for greasing
Instructions
Preheat oven to 180°C (360°F).
Grease a shallow baking dish with coconut oil.
Mix chia seeds and water then stand for 10 mins to make a chia egg.
Combine mashed banana, oat pulp, non-dairy milk and chia egg in a bowl using a wooden spoon.
Sift in cocoa powder, protein powder and baking powder one at a time, stirring each into the mixture until combined.
Fold in chopped nuts or chocolate chips.
Transfer to the oiled baking dish and bake for 20 mins.
Notes
Best enjoyed warm. Keep refrigerated for up to 5 days.
